Yams are available nearly all year. They are high in Beta Carotene, Potassium and Vitamins A and C. To pick good yams, look for firmness and uniformly bright coloring. You can save unused yams without any wrapping. Just cut off the portion you don't need, the flesh will form a latex-like seal as if cauterized. The word yam is strictly an American word. Some yams can grow up to 6 feet long and weigh over 600 pounds. Christopher Columbus discovered yams in the Americas in 1493 and introduced them to Europe.
