Tomatillos are a very popular vegetable in Mexican cuisine. When you choose tomatillos, look for those that are dry and firm with close-fitting, clean husks. Although they look like tomatoes, they should be hard and not give to pressure. They keep in your refrigerator for up to three weeks with little or no deterioration.
