There are three popular types of summer squash: Italian Zucchini, Summer and Yellow Crooked. They are all available year round, are low in calories and contain no cholesterol, fat or sodium. They are high in Vitamin C. The word squash come from a Native American word, "Naragansett" meaning "eaten raw or uncooked". To pick good squash look for little to no scarring, consistent texture and solid color.
