Winter or Hard Squash are named for their tough shell.
They differ from summer squash in the fact that only their
inner flesh is eaten. They can keep for months after being
harvested. There are many varieties... Acorn squash are
sweet and have a slightly fibrous flesh. Butternut Squash
is sweet and nutty and has a creamy textured flesh. Spaghetti
squash has a mild, nutty flavor and flesh that separates
into strands (hence the name).
