Spinach is one of the most nutritious vegetables. It is rich in beta carotene plus other anticancer compounds such as folic acid. Spinach is also high in Fiber, Protein, Vitamins A and C. When picking good spinach, look for crisp, tender and dark-green leaves. Because it grows close to the ground, it is important to wash your spinach thoroughly. Plunge the entire spinach in cold water, shake out and dry well. You should also trim all tough stems and ribs and remove any discolored or wilted leaves.
