Potatoes are considered one of the most important vegetables in the world. 60% of American households eat potatoes everyday. They contain almost perfectly digestible forms of iron and carbohydrates. There are 4 main types of potatoes: Russets are oblong and have a thick brown skin. They are good for baking, mashing and frying. Long whites are oblong with a thin creamy white skin. They are good for chips, in salads or scalloped. Round whites also have a thin, creamy white skin. They are perfect for au gratin, potato salad and country fries. Round reds, also known as new potatoes, have a thin red skin. They are good for boiling and for potato salad. Potatoes originated in Peru and were introduced to Europe by the Spaniards. Ireland was the first European country to cultivate potatoes on a large scale where it remains a staple food.
