Peaches are the third most popular fruit grown in the United States. They are a good source of vitamin C. Peaches are a member of the rose family and will have a sweet aroma as they are growing and after they are picked. There are two major types of peaches: clingstone and freestone. This refers to whether or not the flesh clings to the pit. Peaches have been grown since prehistoric times and were introduced to the United states by Spanish Missionaries in California. To pick good peaches, pay attention to texture and smell. Coloring is a less effective means of picking but the peaches should be yellow or creamy and clean. Peaches begin their ripening process after being picked. So no matter what stage the peaches are in the supermarket, you can ripen them perfectly. Just place them in a paper bag for 2-3 days. They will soften and sweeten to your desired ripeness.
