Onions are the third most eaten vegetable behind potatoes and lettuce. Sweet reds and Vidalia onions are good for BBQ's and salads while whites and yellows are ideal to cook with other vegetables. At home do not keep onions under your sink or near potatoes. Potatoes give off moisture which will cause onions to spoil. The reason we cry when chopping onions is because they give off a chemical called thiopropanl-s-oxide. To limit the irritating effects chill your onions before chopping.
