There are 4 popular types of leaf lettuce: red, butter, green and romaine. They are fat free, low in sodium, cholesterol free, low in calories, high in Vitamin A and Folate. To pick good leaf lettuce pay close attention to the leaf ends and coloring. There should be no leaf burn or wilting and the stalks should have no pink tints. The leaves should be strong and hold their own weight. There are a number of specialty stem lettuce including Frisee, Arugula, Radidichio and Red Oak.
