Iceberg lettuce is a good source of Fiber and Potassium
and is low in calories. It is available year round. To pick
a good head of lettuce look for the most compact heads.
The outside leaves should not be wilting, browning or separating
from the inner core. At times the core end will brown, but
this is natural and a less accurate indicator of the leaves.
Lettuce has been cultivated for over 2500 years. Hippocrates
recommended it for medicinal uses and Christopher Columbus
introduced it to the Western Hemisphere in 1493.
