Green onions are a good source of Vitamin C. They are actually just baby onions pulled just after the bulb has formed. They are a good alternative to more mature onions because they have a more mild flavor. They are used often in Mexican cuisine and add good color to almost any dish. To pick good onions, look for crisp necks and clean white bulbs. Green onions produce an odor that is easily absorbed by many fruits so store them separately.
