Green Beans are grown in 21 states and in Mexico and are available year round. They are low in fat and calories and a good source of fiber. To pick good green and yellow beans pay attention to their texture. They are commonly known as Snap Beans because when fresh, they snap when bent. The bean pods should be solid with no indentations or blemishes. Green beans are also known as string beans because of the tough string that runs along its side. These strings have always needed to be removed before cooking. Today however, American botanists have developed stringless string beans.
