Ginger is a brown, knobby, bulb-like rhizome. To pick good ginger, look for brown, papery skin and hard, consistent texture. It is best stored in the refrigerator in a plastic bag. It adds a very distinct flavor depending on the preparation. When cut or sliced, it will provide a subtle spicy sweet flavor. To magnify the flavor, mince or grate the ginger to allow it to melt better. Ginger has an interesting history. Many years ago it was traded with the same value of gold in China and India.
