Garlic is very versatile. It can be used in almost any dish. Recent studies continue to support the health benefits of garlic. It is reputed to reduce the risk of heart disease and certain types of cancers. In addition, allicin, the main substance in garlic, is known as an antibacterial agent. To pick good garlic, look for dry, firm and solid cloves. Be careful because from the outside garlic may keep its shape even when deteriorating inside. Make sure to gently press the skin to make sure the cloves inside are full. You may shy away from garlic because of the pungent smell it leaves on your fingers and breath. To eliminate the smell from your fingers, rub your fingers on a piece of stainless steel under running water. It may sound illegitimate but it actually works. Fresh parsley should help you combat garlic breath. Sprinkle chopped parsley on any dish containing garlic or just eat the springs usually placed on your plate as a garnish.
