Cherries have a very short season, which might account for the fact that most often people buy them on impulse. A good way to pick cherries is by their shape and the quality of their stems. The body of a cherry should be firm and give the appearance of being on the verge of exploding. The stem should be firm, green and moist. A cherry tree, which originated in China, takes over 10 years to reach maturity. They were brought to America in 1629 and traveled to the Northwest by an ox cart where they are grown today . The Bing cherry was named after a farm worker in 1875.
