Cabbage is high in fiber and Vitamin C and low in sodium and calories. The most common cabbage is one of three types: Green, Red and Napa. The red and green varieties are very similar except for the color. Napa caggage is more pale in color but has a more sweet flavor. Cabbage has been cultivated for over 4000 years. It has played a major role in many historical events. In 1772 Captain James Cook ordered 25,000 pounds of cabbage sauerkraut on his voyage to explore the Pacific. The workers who built the Great Wall of China were nourished with pickled cabbage. Lastly, Genghis Khan used salted cabbage as a main food for his traveling armies.
