Brussels sprouts are a good source of Vitamin C and Dietary Fiber. They are also cholesterol free and low in sodium. To pick good brussels sprouts, make sure they are tightly closed and compact. They look and taste like miniature cabbage. Unlike many vegetables, the smaller and younger the brussels sprouts, the better, sweeter and more subtle the flavor. Many people either love or hate brussels sprouts. The reason is because some of us are born with a gene that makes them taste bitter. For these people no matter how you prepare this veggie, it will always be bitter. A trick for cooking is to cross cut on the bottom of each sprout and cook them with celery; this will control the smell.
