Bell peppers are fat free, low in calories and high in Vitamin C. To pick a good bell pepper, look for deep consistent color and thick firm skin. Although marketed as different items, green and red bell peppers are actually the same vegetable. All colors of bell peppers start green but slowly transform into various colors as they mature. They taste different because as the pepper matures, their sugar content increases. Bell peppers come in many colors including yellow, orange, red, purple, brown and of course green. To roast bell peppers, grill them until the skin is slightly blackened. Remove from the heat and immediately place them in a paper or plastic bag. After 10 minutes the peels should fall off the flesh with light rubbing.
