Bananas are grown primarily in tropical areas such as
Equador. The average person eats 25 pounds of bananas a
year. They are a meal in themselves with good amounts of
protein, fiber, potassium and many vitamins and minerals.
The ripeness of a banana is known according to a numbered
coloring system from 1-7. #1 is completely green, and becomes
progressively more yellow up to #7. As bananas ripen, they
breathe ethylene. The peel changes color while the flesh
inside becomes softer and more sweet. To slow the ripening
process you can place bananas in the refrigerator. But be
warned, the flesh will be fine, but the peel will turn gray
and dark.
