Asparagus is fat free, cholesterol free, sodium free, low in calories and available year round. To pick good asparagus, look for tight compact bud ends. Size does not make a difference to taste. To extend the life of your asparagus, sit their butt end in an inch of water in the refrigerator. Asparagus has been cultivated for over 2000 years. It arrived in the United States in the 1860's in the San Joaquin Valley. It is related to garlic, leeks, tulips and lilies and is often called grass.
