Artichokes are available all year. They are very high in Vitamin A. To pick a good artichoke, raise it to your ear and squeeze a leaf. A young tender artichoke should be springy and produce a squeaky sound. Also check the bud end very closely for worm damage. It may not appear too bad on the surface but even a small blemish can cause extensive damage deep inside the heart. 99% of all United States artichokes are grown in California.
